Hearken back to the old days of Boston, Chicago, NYC where your father, grandfather or uncle would go "see this guy" to "get this stuff"! Taste and sample IMV Salumi as well new products under development not yet available...not even to Chef's!

All Natural, minimally processed, and contains
no artificial ingredients
 

Has the lowest allowable limit of salt content for all dry cured salumi...how salumi was intended to be.

 

No nitrites or nitrates added other than what is naturally occurring in the Utah Real Salt we use as well naturally occuring in juniper berries.

 

Adds no cultures or fermentation enhancers

we rely solely on the purest age old practice focusing on 

four core elements of quality Old World salumi:

1. Meat - high quality, consistent, humanely treated, naturally raised and ethically processed 

2. Sea Salt - from an ancient pure seabed over the hill 

3. Ingredients - wine, spices, herbs

4. Time - slow cold fermentation
