Salumi Porcini Paradiso Paradise Salumi with Porcini is based on a northern Italian Classic known simply as Felino. Our newest salumi is a blend of warm, rich and earthy tones a masterful creation with Grains of Paradise Pepper, Porcini and Spices

Vino e Pepe Nero - A simple, DeNittis Family favorite with deep Calabrian roots, robust flavors of red wine and duo of black peppercorns with a touch of spice.

Calabrese Soppresate - This traditional hand linked and pressed chub is based on another family Calabrese classic. Coarsely ground pork, paprika, hot pepper and duo of black peppercorns is a testament to the homeland.

Pepperoni Piccolo - Classic flavors of this all pork pepperoni gives a pleasant and balanced experience with a balance of anise and classic spices.

PORTUGESE LONGANZIA - Sweet smokey paprika with hints of citrus, herb and sherry wine make this a great salumi for slicing and eating or cooking with.

LOP CHONG (Chinese Salumi) - Several people quoted "A roller coaster of flavors"! This sweet and spicy Asian style salumi is a flavor ride of sweet soy, pomegranate, hints of ginger and a touch of heat.

DUCK BREAST PROSCIUTTINI: Ancient Sea Salt and spices with notes of citrus make this dry cured moullard duck breast a stellar award winning choice.


PORK GUANCIE BACIATE (Kissed Cheeks): Kissed with just enough salt to not be overwhelming, our Guanciale (cured and dried pork jowls) are simple...a touch of juniper, pepper and bay leaf. Slice thin and eat as is or use in place of Pancetta.


PORK PANCETTA PIATTO: Classical essence of old world flavors... fennel, anise and bay make this a favorite.  


Capicola/Coppa: As we say Back East "Cappagool"

Classic and simple these whole intact single muscle cured and seasoned center cut pork butts, are salted, seasoned, and tucked into a beef casing and netting. 

We folllow a meticulous age old method to produce these which develop complex, memorable flavors, with a rich mouth-feel.

  • Hot - Notes of heat from hot pepper are complimented by anise and fennel.
  • Sweet - Notes of anise, nutmeg, and clove with a mildly salty sweet finish.

BEEF BRESAOLA: This ancestral favorite is steeped in tradition with deep Red Wine character, spice and mild saltiness. This air dried beef is  meant to be sliced thin.

Air-dried duck breast is hard to find, and this one is exceptional. Anyone fond of prosciutto, especially the feral pig Jamon Iberico of Spain, will find this alternative more than competitive. (Posted on 4/22/10)
